By eyes, we see the quality of pasta by it's color.
Ideally the drying process will take up to 24 hours at the right temperature and humidity, resulting light yellow colored pasta which still maintaining the rough surface texture.
By touch, we look for rough & porous texture.
This indicates that the pasta has been well processed and dried. Thus, the pasta will cook al dente and absorb more flavors.
By smell, it has a distinct smell of wheat.
High quality wheat tends to leave typical aroma and taste when it's not overprocessed.
By taste, it's known for the al dente texture.
The right elasticity and consistency can be obtained by applying the right method of gluten development to high quality wheat.
